In the wake of Milan's Expo world fair in 2015, the food sector is heading to the Cibus international fair in Parma from May 9-12, ready to showcase thousands of new products at the forefront of innovation and the growing trend for healthy eating.
    Organisers Fiere di Parma and Federalimentare said in a statement that some food products would be making their debut, while others on display at the event have just come on to the market at the start of this year. It is due to publish information about all of them on its website www.cibus.it on Friday.
    Products to feature include ham with sea salt and no preservatives, salami and cheese spreads, organic Parmesan, and gluten-free crackers. Not to mention egg-free mayonnaise, eggs with nutritious substances such as folic acid and iodine, grey sea salt from the Atlantic and pasta with organic hemp seeds. Desserts will also be in the spotlight, including a ready-made line which is sugar and gluten-free, chocolate cream with part of its sugar content substituted with carrot, and Neapolitan pastries which can be conserved for eight months by means of new technology. At Cibus - the organisers underline - several dishes will live up to consumer demands for healthy products: organic, gluten-free, palm-oil free, vegan and so on. From tuna fillets with iodised salt, to organic chicken meat balls, on to vitamin-rich yellow kiwi jam and lactose-free yoghurt. The vegan options are also varied, from a soy-based line to red rice and quinoa soup, green vegan pesto and vegan wraps and focaccias.
